Out of the box it was viciously sharp, and this has been very easy to maintain using a steel even after processing hundreds of pounds of vegetables and other foods. The balance fore and aft is absolutely perfect, which makes it feel like a natural extension of my hand.
I want to note that this knife would not be good for very heavy duty chopping or cutting through bone. It is not as delicate as a sushi blade, and not as heavy as a thick cleaver. I find it just right for general kitchen use, and I use it for about 90% of my cutting tasks at home and at work. Keep in mind that this is not a dishwasher safe tool, and will require you to keep it clean and store it dry. I find providing this kind of TLC is a labor of love which keeps me focused on the art and craft of my work. Very highly recommended.

I want to note that this knife would not be good for very heavy duty chopping or cutting through bone. It is not as delicate as a sushi blade, and not as heavy as a thick cleaver. I find it just right for general kitchen use, and I use it for about 90% of my cutting tasks at home and at work. Keep in mind that this is not a dishwasher safe tool, and will require you to keep it clean and store it dry. I find providing this kind of TLC is a labor of love which keeps me focused on the art and craft of my work. Very highly recommended.
If Miyabi would make the a habana knife with extra height- like a cleaver, and a slightly curved edge, about 7 inches long- this would be truly the best knife imaginable.
If you are a pro chef or even just a home chef who knows what they’re doing, or looking for a gift, this is the one. I plan on using this for the rest of my life. One of the best purchases I’ve made this year.
Recommendations: Always wipe/wash it immediately when finished using it and then dry it immediately as well, don't allow to sit and dry on its own. Due to the chemical make-up of the steel, you can develop rust. This has not happened to me as of yet because I always wash and dry immediately but the steel should be taken care of as it is of high quality.
Next, do not cut anything hard with this (ie. boned meats) as again, the steel is designed to be incredibly sharp and precise, not to chop through bone. You will chip the knife and should have a different tool for that task.
It's a joy to cut with this knife and it makes quick work of meats and vegetables. Cuts are precise and it takes minimal effort to slice through even tougher vegetables like carrots or cabbage. I haven't tried to sharpen it at all yet, as the factory edge is quite good and I want to see how it holds up before I try to touch it up. For sharpening my other knives, I use high-grit automotive wet-or-dry sandpaper (1000-2000 grit) followed by an antique razor hone (in the 6k grit range). The factory edge on this knife is at least as sharp as what that process produces, although the thinner geometry of the blade likely helps as well.
The quality of the blade itself is great - the folded-steel pattern on the sides protects the harder and less corrosion-resistant steel at the edge. Another feature that I like is that the spine of the blade is rounded, so it's more comfortable to hold with a pinch grip. The handle however could have been finished a bit better. The back end of the handle isn't quite flush - the tang sticks out a fraction of a millimeter beyond the black and red handle material. Additionally, there is a gap between the red accent material and the tang near the bolster. I am still quite happy with the knife, but for $200 I wouldn't expect the knife to have those defects, however slight. That said, I'll be keeping it.
